AYO Almondmilk Yogurt  is a new type of yogurt with an amazing twenty almonds—nurtured on the Billings Ranches—in each cup. Each mature organic almond tree can yield enough nuts for up to 300 cups of AYO yogurt and the cultivation process is carefully attended with a high-quality yogurt being the result. Since its launch in 2019, Almondmilk Yogurt has become popular in vegan, nutrient-dense, probiotic-rich communities. At a time when Channel (all-natural retailers) yogurt category is down by 1.8%, AYO is growing 80% within the channel. In the conventional supermarket channel, AYO is at almost 400% growth in the yogurt category.

Matt Billings is the Founder of AYO Yogurt. Matt comes from a family with a long history of farming almonds in California’s sunny San Joaquin Valley. Matt has a lifelong passion for health living, and sustainability. Back in 1913, his great grandfather established a legacy of responsible farming in California and now, nearly four generations later, Matt carries on this legacy. The Billings family have a steadfast commitment to responsible farming practices and better health through wholesome foods. Matt earned his B.S. in Agriculture from the University of California – Davis. He has served as an alternate on the Almond Board of California’s Board of Directors, as well as Chairman of the Production Research Committee.

Matt is involved with the yogurt process from start to finish. Several years ago, the family embarked on a journey to add value to their already famously incredible almonds. He embarked on creating an almond based product—specifically yogurt—that was crafted to taste great and have a unique texture that consumes love.

“When you look at the traditional yogurt market our four flavors make up about 80% of all sales,” Matt Billings declared in a recent interview. “Blueberry is my current favorite; before that it was Peach and before that Strawberry. I assume that my next favorite will be vanilla! I honestly love them all and am very proud of the yogurt that we make.”

Thus far, Ayo Yogurt has received rave reviews from reviewers who frequently note how delicious it is when paired with fresh fruit.

“There are a lot of opportunities to expand Ayo flavors in the future,” Matt said. “We have been compiling all of the suggestions from our customers and consumers since they are a great source of inspiration for us. First up is a plain variety so that consumers can be creative and add their own flavor boosts. Our organic almonds can be the base for a number of amazing plant-based foods.
